i’ve been meaning to share this yummy recipe! i found it on pinterest and have made them a few times…each time a bit different cause- that’s what i do. its super easy and my family loves them! (kids 5 & 7)
i use usweentened coconut flakes. one time i threw in some raisins. another time i threw in a small handful of butterscotch chips
next time i will add some raw sunflower seeds. and of course around here, we use sunbutter.
they are great for the kids lunch! go check them out HERE and let me know if you make them. they also happen to be gluten free.

i only use sunbutter because seamus has a peanut allergy. are you wondering about the natural peanut butter because its consistency? if its a bit “thinner” maybe you could use a bit less and see how it looks? you don’t want it too wet or rolling into balls will be a pain. if i could i would definitely be using a natural PB but then i’d have to eat them all before he came home from school and well….that would just not be smart, although super delicious! haha!
i don’t think you can mess up this recipe too much. if its too wet add more oatmeal or coconut maybe?
