commercial kitchens

so, in researching on how to continue with our dream of growing more of our own food, selling it, and looking at the farmer’s market scene – we discovered if we wanted to sell canned goods, bread, etc…you are required to make those things in a commercial kitchen. well, we don’t have one of those. neither do we have the $10,000 or so to make ours commercial grade.

in further research geoffrey found that here in houston, there are a few commercial kitchens that you can rent. he also discovered they were having a couple open kitchen events (like an open house). the first date available was booked up. the second one was as well but, he requested to be on the waiting list. well, yesterday he got an email saying there was room and we could reserve our spot! so, sunday night we are off to tour a commercial kitchen available for rent in downtown houston. i think we are suppose to bring food to share – what shall i bring?? oh my…i just realized i don’t have a lot of time to figure it out. i need time to think these things through. i would love to make something with veggies/fruit that are in season.

we are also giving serious consideration to me attending the ‘better process control school’ in october. it only comes once a year. it is also the most expensive, most time consuming license/permit we’ll need. so…we’ll see.

    Hatch peppers are IN – right now and they are delish….
    can you stuff/w/ cheese or a rice/grain mix???

    probably could but i have never been a fan of stuffed peppers. just something about ’em.
