so, for the past 2 weeks i have been making bread. no more store brought in this house. geoffrey has wanted me to do for a while but i was so hesitant because i have a serious problem with baked goods. i just keep eating them! seriously. i can’t stop myself and i have not much willpower when it comes to thing like homemade bread.

well, i decided i should really be making our bread so i started doing some research on whole wheat bread recipes. i wanted a bread that 100% wheat. no white flour at all. i have tried making whole wheat breads in the past and was never very happy with the final product. dense. dry. so, i finally decided if i was going to make a good 100% whole wheat bread or a good grain bread then i should start with king arthur. i mean they are the professionals. and a vermont based, employee owned company. i started checking out the recipes on their websites and quickly realized lots of their recipes called for non-fat dry milk and instant potato flakes. things i don’t buy but i decided to get them. i have been making the 100% whole wheat sandwich bread and it has come out perfect every time. (well, except the day i was pressed for time and put it in the fridge after it rose the first time. it just wouldn’t rise the 2nd time. so, no more doing that i guess.) after i made it 2 or 3 times i decided to throw in some sunflower seeds and flax seeds. i probably put in about 1/3 to 1/2 cup of each and we love it! yesterday when i made it i added an extra 1/2 teaspoon of yeast. our hot garage makes a great place for the dough to rise.
