Quinoa and bean salad

Been making this great salad thanks to my friend, sarah! She saw it in a rachael ray magizine & made it – super yummy, healthy & refreshing. It will be a regular summer salad around here. And..it’s versitile too. Sarah doesnt care for fresh basil (i do!) so, she used cilantro & limes it was great! we also threw in some feta cheese…what is not better with feta tossed in? 🙂

Quinoa and Bean Salad

1 can kidney beans
2 cups cooked quinoa (3/4 cup raw)
1 red onion finely chopped
2 bunches of basil or cilantro (i had one bunch of basil and it worked great)
juice from 2 lemons or limes
1/2 cup olive oil
salt and pepper to taste

in a large bowl mix your beans, cooked and cooled quinoa, onions and basil (or cilantro).
whisk together the oil and lime (or lemon) juice. pour over salad and mix well.
throw in some feta cheese if you’d like!  i love this….
